"An olive pâté or olive paste - no matter what you call it, know that it`s outstanding."

Ingredients

  • olives - 10.5 oz (300 g), pitless dark
  • olive oil - 4 tablespoons
  • garlic - 3 cloves pressed
  • parsley - 1/2 bunch
  • capers - 1 tsp
  • lemons - 1
  • walnuts - 1/2 cup, ground

How to make

Soak the olives for 2 hours in warm water to get rid of the salt, then drain them well.

Put them in a food processor or blender with the walnuts, olive oil, parsley, capers, juice of half a lemon.

Blend until smooth, transfer to a suitable container and put it in the refrigerator for 1 hour before serving.
