"We`re not sure where the attractive name of this recipe comes from but we do know from personal experience that Barkada is extremely delicious."

Ingredients

  • corn flour - 1 1/5 cups (300 g)
  • butter - 2/3 cup (160 g)
  • feta cheese - 7 oz (200 g), sheep's
  • pork ribs - 28 oz (800 g)
  • pumpkins - 14 oz (400 g), grated
  • salt

How to make

Prepare the ribs in advance, by seasoning them with salt and black pepper and roasting them until ready. Clean and grate the pumpkin.

Put the pumpkin in salted water and add 2/3 of the butter. Stir and put to boil for 2-3 minutes. Gradually pour in the corn flour, stirring with a wooden spoon for about 10 minutes - the mixture should begin to come off the walls of the pot.

Grease a deep dish which you will serve the dish in. Distribute the pumpkin mixture in it, sprinkle it with crumbled feta cheese and put the ribs.
