Ingredients

  • potatoes - 17.5 oz (500 g)
  • carrots - 2
  • chili peppers - 2 red
  • kyopolou - for garnishing
  • salt - to taste
  • black pepper - to taste
  • oil - 1/3 cup (80 ml)
  • vinegar - 3 1/3 tbsp (50 ml)
  • parsley - a few fresh sprigs

How to make

Peel the potatoes and put them to boil. Once they are ready, but not overboiled, cut them into cubes in a large bowl and top them evenly with the heated oil.
