"Not your usual doughy spirals but an amazing salted cozonac."

Ingredients

  • flour - 5 cups (1200 g)
  • eggs - 3
  • yeast - 1 cube
  • milk - 2 cups (500 ml)
  • sugar - 3 tbsp
  • salt - 1 1/2 tbsp
  • feta cheese - 17.5 oz (500 g)
  • margarine - 2 tbsp
  • oil - for spreading

How to make

Mix the yeast with 1 tbsp sugar, half the milk (heated) and 2 tbsp flour into a sludge. Leave in a warm area for 7-8 min. to rise. Separate the yolk from 1 egg for smearing.

Pour the flour into a suitable container, make a well in the middle. Pour the salt, sugar, remaining milk and eggs in the well.

Add the risen yeast and knead. Leave in a warm place for 45 min, covered with a towel. Knead once again and divide it into 4. Roll out into a rectangle, sprinkle with a few drops of oil and the crumbled feta cheese that's been mixed with the margarine. Wrap each rectangle into a roll.

Form a spiral from each roll and put in a buttered tray. Smear with the egg yolk and leave for 15 min. to rise once more. Bake in a preheated 360°F (180 °C) oven with the fan on for 30 min. Take it out, sprinkle with water and cover with a towel.

Serve warm, optionally sprinkled with mixed spices or with a cup of ayran. You will end up with salty spirals because of the numerous rising of the dough. Enjoy!
