Ingredients

  • vegetable broth - 6 1/5 cups (1.5 L)
  • bread - 5 oz (140 g)
  • onions - 1/2 a head, finely chopped
  • parsley - 3 bunches, finely chopped
  • olive oil - 2 tbsp
  • garlic - 1 clove, crushed
  • nutmeg - 1 pinch
  • salt - to taste
  • black pepper - to taste
  • mushrooms - 23 oz (650 g), large

Preparation

Put the vegetable broth to come to a boil. Soak the bread in cold water.

Braise the onions and garlic, add the mushrooms and parsley. Squeeze out the water from the bread well and add it to the mushrooms.
