Ingredients

  • kidneys - 24.5 oz (700 g)
  • cognac - 1/3 cup (75 ml)
  • oil - 2 2/3 tbsp (40 ml)
  • cream - 1 tbsp
  • mustard - 1 tsp
  • black pepper
  • flour
  • salt

How to make

Clean and drain the kidneys. Cut them into pieces and roll them in flour. Fry them.

Take them out of the grease and sprinkle them with black pepper and salt.

Mix the cognac, mustard and cream in the oil. Bring to a boil and return the kidneys to the sauce.
