Ingredients

  • butter - 2 tbsp (30 g)
  • flour - 2 tbsp
  • broth - 3 cups
  • bacon - 1 thin slice
  • carrots - 1
  • onions - 1 head, small
  • tomato paste - 1 tbsp
  • red wine - 3 tbsp
  • bay leaf - 1
  • black pepper - 5 - 6 peppercorns

How to make

Fry the flour in the butter until it turns dark yellow in color. Dilute with 2 cups of cold broth and boil on low heat, stirring with a wooden spoon.

Chop the bacon into small pieces, fry and once reddened, add the finely chopped carrot and onion to it, along with the spices. Fry until slightly reddened.

Drain the grease from the frying and mix it with the wine. Leave the resulting mixture to boil until reduced by half and then add the sauce and veggies to it.

Let it boil for another 30 min. on low heat, removing the foam and stirring. Add the remaining broth and the tomato paste, season to taste with salt and filter through a cheesecloth. Stir the sauce from time to time until it cools.
