"Shakshouka - aromatic eggs cooked Arabic-style. A taste and aroma that will make you fall in love from the very first spoonful!"

Ingredients

  • olive oil - 1 tbsp
  • onions - 1 head
  • garlic - 1 clove
  • peppers - 1 red + 1 green
  • chili peppers - 1
  • tomatoes - 6 - 7, can use canned
  • sugar - 1 - 2 pinches
  • paprika - 1 tbsp
  • cumin - 1 tbsp
  • salt
  • black pepper
  • eggs - 5
  • parsley - 2 tbsp, chopped

How to make

You will need a large frying pan for this dish. Heat the olive oil in it and add the chopped onions and garlic. After they braise for about 5 min., add the chopped peppers and braise until they soften.

Add the tomatoes, that you've cut ahead of time, along with the juice from the can if using such. Add 1-2 pinches sugar, stir and once the dish comes to a boil, season with the remaining spices, salting at the very end. Use quantities of spices depending on your personal preference.

Once the sauce thickens, break the eggs carefully on top, some distance apart from one another. Put a lid on the pan and cook 10-15 min. - the eggs need to tighten and the tomato sauce needs to caramelize slightly. Finally, sprinkle with chopped parsley and serve.
