Ingredients

  • peppers - 4, yellow and red
  • olive oil - 4 tbsp
  • garlic - 1 clove
  • parsley - 2 tsp, finely chopped
  • black pepper
  • salt
  • anchovies - 2 oz (50 g), fillets

How to make

Roast the peppers in a grill or pepper roaster, smother them in a bag and peel. Cut them into pieces, carefully removing the seeds.

Put them in a bowl, season with olive oil, salt and black pepper.

Sprinkle with finely chopped parsley and anchovy fillets.

Cool in the fridge for at least 30 min. before serving.
