  • blackcurrants - 1 1/5 cups (300 g)
  • sugar - 1 cup (220 g)
  • water - 2/3 cup (150 ml)
  • cream - 1 2/3 cups (400 g)
  • eggs - 4 egg whites


Dissolve the sugar in the water, put it on the stove and boil a sugar syrup on low heat for 20 min.

Remove from the stove and let it cool a bit. Wash the blackcurrants, blend and pass them through a sieve.

Whip the egg whites into snow and pour the cooled syrup into them in a thin trickle while beating nonstop.

Beat the cream. Add it to the egg whites. Stir and add the blackcurrants.
