Ingredients

  • oil - 2 tbsp
  • onions - 1 small head
  • peppers - 1 red + 1 yellow
  • mushrooms - about 3 oz (90 g)
  • garlic - 1 clove
  • macaroni - 8 oz (230 g)
  • eggs - 4, large
  • cheese - 3 tbsp, cottage, cream or fresh
  • green onions - 1 - 2 tbsp, chopped
  • black pepper
  • salt
  • cheddar - 1 oz (30 g), grated, low fat

How to make

Heat the oil and saute the chopped onions, peppers, mushrooms and garlic at the end.

Boil the macaroni with generous amounts of salted water for about 8-10 min. or according to package directions.

Add the strained macaroni to the saucepan with the vegetables and stir.

Whip the eggs with the cheese and add the green onions and spices. Pour it over the mixture in the pan and stir.

Put the pan on a low stove and cook until it gets an appetizing crisp on the bottom. Grate the cheddar and put the tortilla in a heated oven briefly to crisp.
