"You know what the masters say - a tasty fish soup is made with several kinds of fish and the right spices."

Ingredients

  • fish - 2 lb (1 kg)
  • olive oil - 6 tbsp
  • onions - 1 head
  • celery - 1 bunch
  • carrots - 1
  • parsley - 4 tbsp
  • white wine - 4/5 cup (175 ml)
  • tomatoes - 3
  • garlic - 2 cloves
  • water - 6 1/5 cups (1.5 L) hot
  • black pepper
  • salt

How to make

Heat the olive oil in a pot and braise the onions. Add the celery and carrot and saute for another 5 min. Add the parsley.

Pour in the wine and boil until half the liquid is absorbed. Add the chopped tomatoes and garlic, cook another 3-4 min. and pour in the hot water.

Bring to a boil once again and cook another 15 min. Add the sliced fish and boil 10-15 min., season with salt and black pepper.

Take the fish out of the soup and mash it. Return it to the soup, stir and serve with bread.
