  • bread - 4 pitas
  • cherry tomatoes - 8
  • cucumbers - 1/2
  • onions - 1/2 head
  • lemon juice - 1 tbsp
  • eggplants - 1 peeled and sliced
  • hummus - 1 cup
  • parsley - 1/2 cup
  • rapeseed oil

How to make

Boil the eggs for 10 min. and shell them. In the meantime heat the oven to 390°F (200 °C) and heat up the bread pitas.

Mix together the chopped tomatoes, onions, cucumber and lemon juice in a bowl, season with salt to taste.

Heat oil in a pan and arrange a row of the peeled and sliced eggplant. Braise them for a few min., take out with a slotted spoon and strain.

Repeat this process until you run out of eggplant.

Stuff the heated bread pitas with slices of eggplant, egg, the tomato salad, parsley and hot sauce if desired. Serve with hummus.
