  • parsnips - 3
  • potatoes - 3
  • sweet potatoes - 3
  • carrots - 3
  • olive oil - 4 tbsp
  • garlic - 2 cloves
  • shallots - 8 heads
  • mustard seeds - 2 tsp
  • coriander - 2 tsp, seeds
  • cumin - 2 tsp, seeds
  • bay leaf - 2
  • black pepper

How to make

Heat the oven to 370°F (190 °C). Boil water in a pot, add the washed and peeled potatoes, parsnips and carrots.

Boil for 2 min. and drain them.

Pour the olive oil in a pan, add the vegetables, shallots and garlic. Braise them until they change their color.

Add the seeds and bay leaf, cook 1 more min. and season with salt and black pepper. Transfer to an oven dish and bake 45 min.
