Ingredients

  • beans - 1 cup
  • peas - 1 cup
  • zucchini - 2
  • potatoes - 2
  • tomatoes - 4
  • garlic - 1 bunch
  • onions - 1 head
  • macaroni - 1 cup, fine
  • bacon - 2 slices, 2 oz (50 g)
  • vegetable broth - 8 1/3 cups (2 L)
  • red wine - 1/2 wine glass
  • oil - 3 tbsp
  • cheese - for sprinkling

How to make

Soak the ripe beans overnight. Rinse them the next morning, pour in new water and put them to boil. Heat the olive oil in a separate container and braise the finely chopped onion head.

Fry the onion no more than 1-2 min., then add the finely chopped garlic and chopped bacon. Braise the products for a few more min., then throw in the finely chopped tomatoes to them.

Boil the beans until almost softened, then pour on the sauteed vegetables. Add the wine, broth and carrots and boil another 30 min. on low heat.

Next, it's time to add the potatoes and zucchini, peeled and diced ahead of time, as well as the peas. Boil the products another 15 min., add the macaroni and boil until they soften - if necessary pour in more hot water.

Before serving, sprinkle the soup with grated cheese. If desired, add parsley.
