"Supermarkets sell all kinds of pitas. But you`re not going to find this one anywhere!"

Ingredients

  • flour - about 2 lb (1 kg)
  • eggs - 3
  • yoghurt - 1 1/5 cups (300 g)
  • yeast - 1 packet
  • oil - 1 cup
  • salt - 1 tbsp
  • sugar - 1 tbsp
  • water - 1 cup, cool
  • seeds - for sprinkling

How to make

Sift the flour and make a well. Dissolve the yeast in the cool water along with the sugar, salt and 1 tbsp flour. Let the yeast rise.

Pour the yoghurt (at room temperature), oil, yeast into the flour and break the eggs over them. Set aside 1 yolk for smearing the loaf. Knead a soft dough (if necessary add a little more water).

Cover the dough and let it rise a little. Shape the loaf as you like and put it in a buttered, dry oven dish. Smear it with the yolk and sprinkle with the seeds. Leave it to double its volume again.

Bake in the oven, gradually increasing the temperature to 390°F (200 °C). Sprinkle the ready loaf with water and cover it to soften.
