"An unbelievable combination of mince and zucchini, brought together in a tasty schnitzel. Serve with a little yoghurt garlic sauce and enjoy its remarkable taste."

Ingredients

  • mince - 17.5 oz (500 g) mix
  • zucchini - 2
  • yoghurt - 1 cup (250 g)
  • baking soda - 1 tsp
  • savory - 1 tsp
  • black pepper - 1 tsp
  • cumin - 1 pinch
  • eggs - 2
  • breadcrumbs - 2 tbsp
  • flour - 2 tbsp
  • garlic - 1 clove
  • oil - for frying

How to make

Wash and grate the zucchini. Put them in a colander to drain for 15 min. In a bowl, put the mince, break the eggs, add the yoghurt, baking soda and all the spices. Chop the garlic very finely, press on the zucchini lightly to squeeze out any remaining juice.

Add the garlic, flour, breadcrumbs and zucchini to the mince and stir everything, best to use your hands. Leave in the fridge for 30 min.

Heat the oil and using a wet spoon or small ladle, scoop from the mixture and drop it in the oil, forming them into a slight oval shape. Lower the stove to a medium temperature and fry until golden brown on both sides.

Flip them over once you feel like one of the sides is fully fried. This way the schnitzels will be tighter, otherwise you risk them breaking apart if you flip them too early.

Strain on paper towels and serve with garlic yoghurt sauce.
