Ingredients

  • flour - 4 tbsp
  • eggs - 2
  • parmesan - 7 oz (200 g)
  • lettuce - 2 leaves
  • spinach - 7 oz (200 g)
  • black pepper - 1/4 tsp
  • nutmeg - 1 pinch
  • salt - 2 pinches

How to make

Cut the spinach and lettuce into strips, pour in half a cup of water and boil until softened. Strain them. Mix them with 2/3 of the grated parmesan, the eggs, salt, black pepper and nutmeg.

Set aside 2 tbsp of the flour, put the rest into the dough. Stir everything and leave it for 1 hour in the fridge.

Form small, elongated strips and roll them in flour. Boil them in salted water for 10 min. Strain and sprinkle with the remaining grated parmesan.
