Ingredients

  • for the gnocchi
  • potatoes - 2 lb (1 kg)
  • flour - 1 cup (250 g)
  • eggs - 1
  • parmesan - 2 oz (50 g)
  • salt
  • for the topping
  • tomatoes - 5.5 oz (150 g), canned
  • cheese - 3.5 oz (100 g), smoked or plain
  • cooking cream - 3 1/3 tbsp (50 ml)
  • oil - 2 tbsp
  • onions - 1 head
  • water - 2 tbsp
  • salt
  • black pepper

How to make

Boil the potatoes in salted water, peel and mash them, while they're still hot. Add the egg, flour and parmesan, to obtain a smooth dough.

Form the dough into a roll the thickness of a hot dog wiener, roll it in flour and cut it into pieces about 1 long. With a fork, make cross cuts along each piece. Boil thus prepared gnocchi for 2-3 min. in salted water until they rise to the surface of the water.

Heat the oil and braise the onions in it until golden. Add the water and saute 2-3 min. Add in the finely chopped tomatoes, salt and black pepper to taste (can also add basil). Boil the sauce for 10 min. on low heat. Pour in the cream, let it bubble and then remove from the stove.

Strain the gnocchi and transfer them to a deep oven dish. Pour in the sauce on top, sprinkle with the cut strips of cheese and bake in a preheated 360°F (180 °C) oven for about 10-15 min.
