Ingredients

  • pork shanks - 21 oz (600 g), hind
  • onions - 21 oz (600 g)
  • red wine - 1 2/5 cups (350 ml)
  • brown sugar - 1 tsp
  • oregano - 1 tsp
  • allspice - 2 seeds
  • black pepper - to taste
  • salt - to taste
  • vegetable broth - 2/5 cup (100 ml)
  • olive oil - 2 tbsp (30 ml), or oil
  • bay leaf - 1
  • thyme - 1 tsp
  • paprika - 1 tbsp

Preparation

Clean and chop the onion coarsely, wash and dry the shank. In a bowl, mix the spices with the olive oil and sugar. Rub this mixture into the meat.

Place it in a clay container and arrange the onions, allspice and bay leaf around it. Pour in the wine and broth and cover with the lid.

Bake at 392°F (200 °C) for about 30 min. first, then reduce to 320°F (160 °C) and saute for 2 hours. Finally, take the lid off, check on the meat and leave it without it to crisp for another 20 min.find similar recipes here
