Cake with Cornflakes and Mascarpone

Ingredients

  • cornflakes - 1 4/5 cups (450 g), chocolate flavored
  • butter - 1/2 cup (125 g)
  • liquid cream - 3 1/3 tbsp (50 ml)
  • sugar - 1 1/2 cups
  • oats - 3 cups, fine, or use muesli
  • mascarpone - 1 2/3 cups (400 g)
  • sour cream - 4/5 cup (200 g)
  • yoghurt - 2 cups, high fat
  • vanilla - 1 packet
  • fruits - 24.5 oz (700 g), by choice, cleaned and chopped + some for decoration
  • raisins - 2/5 cup (100 g)

Preparation

Beat the butter with 1/2 cup sugar and add the liquid cream while stirring nonstop. Pour in the coarsely ground cornflakes and stir well. Lay out the mixture along the bottom of a buttered form with removable sides and put it in the fridge to harden.

Beat the mascarpone with 1 cup sugar until you get a smooth cream and add the sour cream, yoghurt and vanilla, while stirring nonstop. Stir with a stirrer until homogenized and pour 2/3 of the mixture onto the layer in the form.

Arrange half the fruits on top. Distribute the oats or muesli over them, put the raisins, the remaining 1/3 cream and arrange fruits again, sprinkle with the remaining cornflakes or make a decoration as desired. Put the form in the fridge for several hours, best if overnight.
