Ingredients

  • cake layers - vanilla + chocolate, sponge ones
  • liqueur - 4/5 cup (200 ml), or sherry
  • mascarpone - 4/5 cup (200 g)
  • confectionery cream - 4/5 cup (200 g)
  • powdered sugar - 2/3 cup (150 g)
  • jam - 4/5 cup (200 g), strawberry
  • strawberries - 1 1/5 cups (300 g)
  • apricots - 4/5 cup (200 g)
  • peaches - 2/5 cup (100 g)
  • cherries - 4/5 cup (200 g)
  • watermelon - 1 slice
  • mint - fresh

How to make

Beat the confectionery cream with a mixer until fluffy and sweeten it with the powdered sugar. Gradually add the cream cheese in portions and beat until it gets fully absorbed.

Wash all the fruits well. Clean the strawberries and cherries from their stalks, remove the pits from the cherries. Cut the apricots and peaches into pieces.

Put the chocolate layer into a medium sized transparent bowl. Soak it with half the liqueur. Cover with 1/3 of the cream and smooth it out.

Pour in the pieces of peaches and apricots but set aside a few of them. Cover with cream again but be careful for it not to hide the fruits so that they are still visible from the side of the bowl. Cut several strawberries into 2 and arrange them with their insides facing the wall of the bowl.

In the middle, arrange more strawberries cut into small pieces and put the diced vanilla layer as well. Soak the layer with the rest of the liqueur. Distribute the rest of the cream on top and smooth it out.

Arrange the cherries on top. Pour in the beaten strawberry jam. Decorate it with all of the fruits, while also adding the diced watermelon. Place leaves of fresh mint on top.
