"Nothing says `Good Morning` quite like these muffins with potatoes and feta cheese, still warm from the oven!"

Ingredients

  • potatoes - 10.5 oz (300 g), boiled
  • feta cheese - 7 oz (200 g)
  • oil - 1/2 cup
  • flour
  • eggs - 2 + 1 yolk for smearing
  • baking soda - 1 tsp
  • salt - 1 tsp

How to make

Mash the potatoes and feta cheese.

Break the eggs and add the oil. Stir. Add the sifted flour (about 2 cups), the salt and baking soda.

Knead a soft dough. Tear balls and fill the muffin cups (oiled beforehand) with them.

Smear the muffins with beaten egg yolk on top. Bake in a preheated oven until golden.
