For the layer: Break the eggs, separate the yolks from the whites. Beat the whites to snow. Beat the yolks, butter and honey with a mixer. To them add the beaten to snow egg whites, mix them carefully with a spatula.

Then, sift a little flour with the baking powder, salt and cocoa, stir again and gradually add more flour until you get a smooth cake mixture.

Pour the mixture into a large oven dish laid out with baking paper, then bake at 356°F (180 °C) for 10 min. and increase to 392°F (200°C) until ready. Once the cake layer is baked, leave it to cool completely.

For the cream: Beat the confectionery cream and sugar with a mixer, then add the cream cheese and grated lemon rind and beat again.

Once the layer has cooled, cut it into 8 identical squares, then cut them diagonally to obtain triangles.
