Ingredients

  • for the layer
  • eggs - 4
  • sugar - 1 cup
  • powdered sugar - 1 cup
  • vanilla sugar - 1 packet
  • lemon juice - 1 tsp
  • baking powder - 1 packet
  • flour - 7 tbsp
  • cocoa - 1 tbsp
  • butter - 2 tbsp
  • for the cream
  • confectionery cream - 1 1/5 cups (300 ml)
  • cream cheese - 1 packet
  • confectionery dye - yellow
  • coconut flakes - caramelized

How to make

Separate the egg yolks from the whites. Add the sugar to the whites and beat them to thick snow with a mixer. Gradually add the sifted powdered sugar, lemon juice and continue beating.

Add the yolks one by one and beat until ready. Sift the flour and add it spoon by spoon to the egg mixture, along with the baking powder and vanilla sugar, while stirring until you get a smooth mixture.

Lay out a baking form with removable sides with baking paper and pour the mixture into it. Bake the layer in a preheated oven. Once ready, let the cake layer cool and cut it into 2, to obtain 2 layers.

Dig out the insides, add the cocoa and butter, stir to get crumbs and pour them over the lower layer. Beat the confectionery cream until fluffy.

Add the cream cheese and beat until ready. Syrup the layers lightly with sugar syrup and smear them with some cream. Assemble the cake.

To the rest of the confectionery cream, add the confectionery dye and smear the cake on top with it. On the sides, sprinkle with caramelized coconut flakes and draw a smiley face on top.
