Ingredients

  • chicken breasts - 16 oz (450 g)
  • onions - 1 head
  • peppers - 2 (roasted and peeled)
  • garlic - 2 cloves
  • oil - 3 - 4 tbsp
  • chorizo - 5.5 oz (150 g) (or other spicy sausage of choice)
  • cajun seasoning - mix of 1 tsp paprika, 1 tsp chili flakes, 1 tsp dried basil, 1 tsp ground cumin, 1/2 tsp black pepper
  • rice - 1 cup (250 g)
  • tomatoes - 14 oz (400 g) (1 can, diced tomatoes)
  • chicken broth - 2 cups (500 ml)

How to make

Heat the oil in a large and deep pan on moderate heat and braise the chicken that you've diced ahead of time until golden (about 8-10 min).

Take the chicken bites out and braise the onion that you've diced beforehand until softened (about 4 min).

Add the cut into strips peppers, the finely chopped garlic, chopped chorizo and Cajun seasoning. Cook while constantly stirring for about 5 min.

Return the chicken bites, add the rice, then the diced tomatoes and chicken broth. Stir very well and close with a lid. Cook until the rice is ready - about 20-25 min.
