Ingredients

  • pork steaks - 4
  • onions - 2 heads
  • garlic - 2 - 3 cloves
  • for smearing
  • soy sauce - 1 tbsp
  • oil - 2 - 3 tbsp
  • cayenne pepper - 1/2 tsp
  • savory - 1 pinch
  • thyme - 1 pinch
  • basil - 3 - 4 leaves, fresh
  • cumin - 1 pinch
  • paprika - 1/2 tsp

How to make

Tenderize the steaks with a mallet. In a bowl, mix the oil, soy sauce and spices. Stir well and leave it aside.

Cut the onions into round slices or crescents. Prepare string or baker's twine. Lay them out in 3's in a cross on top of foil. Take a steak and smear it with the marinade well.

Place it on top of the twine. Arrange onion slices and place the next steak on top, also smeared with marinade. Put onions again and continue in the same manner, finishing off with a steak.

Tie with the twine tightly and put it in an oven dish. Pour in a little water and cover with foil.

Bake at 370°F (190 °C) for about 40 min. Remove the foil and finish baking until golden. Take the meat out onto a plate, leave it to cool slightly and remove the twine.

Thicken the sauce released in the oven dish with 1 tbsp starch and a little water.

Serve it in a sauce boat and cut the meat into pieces.
