Ingredients

  • biscuits - 1 1/2 packets, cocoa
  • butter - 1 cup (250 g)
  • cottage cheese - 2 cups (500 g), unsalted
  • sour cream - 1 2/3 cups (400 g)
  • eggs - 3
  • brown sugar - 1 cup, or white
  • vanilla - 1/2 capsule
  • oranges - rind of 1 and some of its juice
  • jam - 1, strawberry (or whatever kind you have)

How to make

Crumble the biscuits finely and make a dough from them and the melted butter. Carefully lay it out along the bottom of a cake form with removable sides and form a 1 thick border along the walls.

Bake the layer for 10 min. in a preheated 360°F (180 °C) oven. Take it out and leave it to cool well. In a deep container, beat the eggs with the sugar, vanilla and orange juice.

To them add the cottage cheese, sour cream, and finally the orange rind. The mixture needs to be smooth, homogeneous and semi-liquid.

Pour it over the cake layer and bake in a preheated 360°F (180 °C) oven for 30-40 min. or until the surface browns and hardens.

Take it out, cool well and finally smear with the strawberry jam. Leave in the fridge for a few hours. The cheesecake tastes best after sitting for 24 hours in the fridge.

This allows for the flavors fully settle and for the cottage cheese's tartness to gradually disappear. It's unbelievably delicious and light. Enjoy!
