Ingredients

  • brown sugar - 3 1/3 tbsp (50 g)
  • sugar - 3 1/3 tbsp (50 g)
  • flour - 4/5 cup (180 g)
  • butter - 2/5 cup (115 g)
  • coconut flakes - 3 1/3 tbsp (50 g)
  • eggs - 2
  • carrots - 2, grated
  • vanilla - 1
  • baking soda - 1 tsp
  • baking powder - 1 tsp
  • cinnamon - 1 tsp
  • ginger - 1/2 tsp
  • nutmeg - 1/2 tsp
  • cloves - 1/2 tsp
  • salt - 1/4 tsp
  • for glazing
  • powdered sugar - 2/5 cup (100 g)
  • lemon juice - 2 tbsp (30 ml)

How to make

Mix all of the spices with the flour and put it aside. Melt the butter and to it add the brown and white sugar, stir well.

Add 2 eggs and the vanilla and stir well. Add the carrots, coconut flakes and flour mixture and stir well. Cover with foil for 1 hour and put it in the fridge.

Preheat the oven to 360°F (180 °C). Form biscuits from the mixture and arrange them onto an oven dish laid out with baking paper. Put them in the oven for 10 min. Once you take them out, leave them to cool for a few min.

If you'd like to glaze them, mix the powdered sugar and lemon juice and pour this over them with a spoon.
