Ingredients

  • for the cake
  • flour - 1 cup (260 g)
  • carrots - 12 oz (340 g), grated
  • walnuts - 2/5 cup (100 g), coarsely ground
  • eggs - 4
  • sugar - 4/5 cup (200 g)
  • oil - 1 cup (240 ml)
  • vanilla - 1 ampule
  • cinnamon - 1 tsp
  • baking powder - 1
  • salt - 1 pinch
  • for the glaze
  • butter - 3 1/3 tbsp (50 g), soft
  • cream cheese - 1 cup (250 g)
  • powdered sugar - 1 cup (230 g)
  • vanilla - 1 ampule
  • lemon zest - 1 tsp

Preparation

Sift the flour with the baking powder in a bowl. Separately, beat the eggs with the sugar to a fluffy cream with a mixer.

Lower the mixer to low speed and add the following in order: the oil, vanilla, salt, cinnamon. Add the flour in lots while stirring nonstop.

Finally, add the carrots and walnuts and stir with a spatula. Pour the mixture into an oven dish, laid out with baking paper. Bake in a preheated 356°F (180 °C) oven until ready.

Separately, beat the butter with the cream cheese for the glaze, add the powdered sugar, vanilla and lemon zest. Smear the cooled cake with the glaze and put it in the fridge.find similar recipes here
