Ingredients

  • chicken offal - 10.5 oz (300 g), livers, hearts, gizzards
  • green onions - 2 bunches
  • peppers - 1 green + 1 red
  • carrots - 1
  • tomatoes - 3 tbsp, canned
  • potatoes - 3 - 4
  • mushrooms - 2
  • spinach - 3.5 oz (100 g)
  • for the thickening agent
  • eggs - 1
  • vinegar - 2 - 3 drops
  • salt
  • black pepper
  • celery
  • parsley

How to make

Chop and braise the offal. Add the finely chopped onions, carrot and peppers.

After a few min., add the mushrooms, diced potatoes, spinach and tomatoes. Pour in hot water until the soup reaches the desired consistency (you decide).

Once the vegetables soften, thicken the soup with the egg beaten with a little vinegar. Sprinkle with chopped parsley.
