Ingredients

  • mince - 14 oz (400 g) lamb + 14 oz (400 g) beef
  • garlic - 2 cloves
  • butter - 3 1/3 tbsp (50 g)
  • olive oil - 2 tbsp (30 ml)
  • lemon juice - 1 tsp
  • cayenne pepper - 2 tsp, flakes
  • coriander - 1 tsp
  • cumin - 1 tsp
  • paprika - 1 tsp
  • black pepper - 1 tsp
  • salt - 1 tsp
  • thyme - 1/2 tsp

Preparation

Mix the 2 kinds of mince in a bowl and add the dry spices, lemon juice and butter (cut into small pieces). Knead everything very well and put in the fridge for at least 2 hours.

Once you take the prepared mince out, begin to form it on skewers with oiled hands.

You need to get an elongated and flat meat skewers. Return to the fridge again briefly.

Heat a grill or grill pan and cook the skewers. If using a grill pan, it's good to carefully wipe up the excess fat that drips from the meat with a napkin so you don't end up sauteing the meat instead of grilling it.find similar recipes here
