Ingredients

  • milk - 4/5 cup (200 ml), warm
  • yeast - 1/2 cube, fresh
  • sugar - 1 tbsp
  • eggs - 2
  • yoghurt - 2 tbsp
  • oil - 2 tbsp
  • salt - 1 tsp
  • flour - as needed for a medium thick, stretchy dough
  • butter - 1/5 cup (60 g), melted, for smearing
  • feta cheese - crumbled
  • for smearing the pita
  • eggs - 1 yolk
  • milk - 2 tbsp
  • oil - 1 tsp
  • for the rose
  • flour - 4/5 cup (170 g)
  • water - 2/5 cup (100 ml)
  • starch - 1/5 cup (70 g), natural

How to make

First, dissolve the yeast in the milk, along with the sugar and several tbsp flour. After it becomes effervescent, knead a dough with the remaining ingredients. Leave it to double in volume, then roll out a 1/4 thick sheet from the dough. Smear it generously with melted butter.

Cut half the sheet into strips. Crumble feta over the uncut half. Wrap it into a roll, starting from the uncut side.

Wrap the roll into a snail shell pattern and transfer to an oven dish. Leave it to rise for as long as it takes (depending on the room temperature).

Once risen, smear it with beaten egg yolk, milk and oil. Sprinkle on a mix of seeds. Bake 35-40 min. in a preheated 320°F (160 °C) oven.
