"A marvelous pita requires quality ingredients, a skilled hand and lots of love. Everything else is described in the recipe."

Ingredients

  • flour - about 2.5 lb (1.2 kg)
  • feta cheese - 9 oz (250 g)
  • eggs - 5 + 2 yolks
  • sugar - 1 tbsp
  • salt - 1 tbsp
  • yeast - 1 cube
  • yoghurt - 1 2/3 cups (400 g)
  • water - 1 cup, cool
  • oil - 5 tbsp
  • butter - 2/3 cup (150 g)

How to make

Sift the flour. Dissolve the yeast in the cool water, add the sugar and 1 tbsp flour. Leave the yeast to activate.

Break 3 eggs in a large bowl and stir. Add the yoghurt, oil and salt. Stir and add the effervescent yeast. To the liquid ingredients, add the flour in lots and stir. Begin to knead until you obtain a soft and smooth dough. Cover it with a clean towel and leave to rise.

Divide the ready dough into 5 balls. Melt the butter. Break 2 eggs and add them to the crumbled feta cheese. Stir this filling.

Roll out each ball into a sheet using a rolling pin (the size should allow it to fit in the oven dish you intend to bake). Smear an oven dish with a nonstick coating with butter. Place the 1st sheet, smear with melted butter on top and sprinkle with filling.

Repeat this process for the rest of the dough. Smear with butter at the very top. Place a small bowl in the middle and form a circle. Cut the pita into triangles, with all of them pointing toward the circle.

Twist every triangle, alternating between twisting them left and right. Smear them with beaten egg yolks. Put the oven dish in the oven and heat it to 300°F (150 °C). In the meantime, the pita will rise more.

Finish baking at 390°F (200 °C) until it gains a golden crisp. Check to see if it's ready with a wooden skewer. Take the ready pita out of the oven, sprinkle with water and wrap it with a towel for about 15 min.
