Ingredients

  • strained yoghurt - 2 cups (500 g)
  • sugar - 2 cups
  • eggs - 5
  • flour - 3 cups
  • baking powder - 2 tsp (10 g)
  • peaches - 1 cup, chopped, from compote
  • lemon zest
  • vanilla - 1
  • flour - 2 tbsp, for rolling the fruits
  • for the syrup
  • sugar - 2 cups
  • water - 1 cup
  • compote juice - 1 cup

How to make

Separate the egg whites from the yolks. Beat the whites to fluffy snow. In another bowl, beat the yolks, sugar, yoghurt, vanilla and lemon zest.

Mix the flour with baking powder and begin to gradually add it to the yolk mixture, while stirring with a spatula. Add the egg whites and carefully stir to a homogeneous mixture.

Roll the finely chopped peaches in flour and add them to the mixture. Stir and pour it into an oiled and floured form. Bake in a preheated 360°F (180 °C) oven for about 1 hour. Leave the ready cake to cool in the form.

Put the syrup to boil for 10 min. and gradually pour it over the cooled cake until all of the syrup is absorbed. Once it cools again, invert it onto a plate.
