Ingredients

  • chicken breasts - 2 - 3
  • peppers - 3 - 4, red, roasted
  • mozzarella - 4.5 oz (125 g)
  • cheese - 2.5 oz (70 g)
  • spinach - 1 handful, fresh
  • breadcrumbs - for sprinkling
  • salt - to taste
  • black pepper
  • oil - for sprinkling
  • all purpose spice - for chicken

How to make

Cut the chicken breasts into 3 pieces horizontally and place them in a buttered oven dish. Sprinkle with a little salt, black pepper and the chicken spice.

Open up the roasted peppers like a book and place them on top of the meat. Arrange pieces of mozzarella on top.

Blanch the fresh spinach in boiling salted water, strain it well and distribute onto each piece of meat.

Cover with the 2nd piece of chicken meat. Sprinkle with breadcrumbs, salt and a little more chicken spice. Pour on a little oil on top and bake in a preheated 390°F (200 °C) oven about 25 min.

Take the oven dish out and sprinkle the chicken with grated cheese, return to the oven for another 5 min. for the cheese to melt. Serve with fresh lettuce or potato salad and a glass of wine.
