Grate the zucchini on a coarse grater. You can do the same with the carrot but I diced it finely.

Clean the pepper of its seeds and cut it into small pieces.

Heat the oil in a pan and braise the finely chopped onion, pepper and carrot in it. Once they soften, add the grated zucchini, finely chopped garlic cloves, sprinkle with salt and black pepper, stir and cook until the zucchini soften a little but don't let them lose their fresh taste.

Take off the stove and stir with the cream cheese. Sprinkle with finely chopped fresh dill and lemon juice.

Serve it smeared on whole grain toast or as a scoop in a plate.
