"Once the temperatures rise outside, we tend to cook lighter dishes more often, such as these stuffed peppers."

Ingredients

  • peppers - 4, green
  • oil - 2 tbsp
  • eggs - 2
  • feta cheese - 5.5 oz (150 g)
  • zucchini - 1 - 2
  • cheese - 2 oz (50 g), for sprinkling
  • parsley - 5 bunches, fresh

How to make

Wash the peppers and cut them down the middle. Remove the seeds and arrange the resulting halves in an oiled oven dish.

In a bowl, mix together the crumbled feta, eggs, grated (or diced) zucchini and finely chopped parsley. Stir well with a fork.

Stir the pepper halves with the filling using a fork. Bake in a preheated oven until ready. Shortly before they're ready, you can add grated cheese on top and crisp it briefly.
