  • strawberries - 4.5 lb (2 kg)
  • sugar - 4.5 lb (2 kg)

How to make

With strawberry season in full swing, I decided to make my own homemade strawberry syrup. Clean, wash them and place in a large pot in the fridge for 12 hours. Pour a cup of sugar over them so that they release their juice.

Then take the pot out and mash the fruits. Even if you leave a fruit whole, it's okay. Add the sugar and water to the mashed fruits.

Put the put on the stove and boil for 30 min., while stirring with a wooden spatula. Next, add the citric acid and stir again. Then pour it into a cheesecloth or gauze (a finer one) and strain.

Distribute the syrup into bottles, close with caps and you're done. The thick part is pure jam, pour it into jars. Boil the filled bottles and jars for 10 min.

I tend to make them for immediate consumption and store them in the fridge. Dilute the syrup with sparkling water or mineral water to taste. It's the ideal summer beverage when you throw in ice cubes!
