Ingredients

  • chili peppers - 5.5 lb (2.5 kg)
  • garlic - 5.5 oz (150 g)
  • oil - 1 cup (250 ml)
  • white wine vinegar - 2 cups (500 ml)
  • sugar - 3 tbsp
  • parsley - 3 1/3 tbsp (50 g)
  • bay leaf - 5
  • celery - 3.5 oz (100 g), leaves
  • salt - to taste

How to make

Wash the chili peppers well and make slight cuts on them so they take in the marinade better. Pour the vinegar, sugar, oil, salt and bay leaf in a pot. Bring the mixture to a boil on low heat, while stirring nonstop. Add half the chili peppers to the marinade and press them lightly.

Boil for about 10 min. and take them out. Repeat this process with the remaining chili peppers. Leave the marinade to cool and mix it with the chopped parsley and celery. Chop the garlic cloves and add them to the marinade.

Bring to a boil on low heat once again, boil for 2-3 min. Pour the mixture over the peppers. Stir carefully and put in the fridge for 24 hours. Distribute into jars, pour in the marinade. Close and store in a cool area.
