  • dough
  • yeast - 1 1/3 tbsp (20 g)
  • milk - 1 1/5 cups (300 ml)
  • sugar - 1 tsp
  • salt - 1 tsp
  • eggs - 2
  • flour - 2 1/5 cups (550 g)

  • feta cheese - 5.5 oz (150 g)
  • seeds - 1 tbsp, for sprinkling

How to make

Activate the yeast by mixing it with part of the warm milk with the sugar, then leave it to bubble. Pour it into the flour. Add the rest of the ingredients for the dough and remaining milk but set aside 1 egg yolk - smear it on top.

Knead a soft dough. Leave it to rise in a warm area for 30 min. Once ready, divide up the dough into 2 parts. Roll out each one into a round sheet, smear it with oil and sprinkle with feta cheese. Cover with the 2nd rolled out sheet on top. Cut it into 1/2″ (1 cm) strips.

Arrange them in a spiral in an oiled tray. Let it rise another 20 min., smear with beaten yolk and sprinkle with seeds. Bake in a preheated 360°F (180 °C) oven about 40 min. until it gains a golden crust.
