Ingredients

  • milk - 1 2/3 cups (400 ml)
  • yeast - 1 cube
  • eggs - 4 + (1 yolk for the mixture, 1 yolk for smearing)
  • salt - 1 tbsp
  • sugar - 2 tbsp
  • oil - 3 tbsp
  • lemon juice - 1 tbsp
  • baking soda - 1 pinch
  • flour - about 2 lb (1 kg)

How to make

Mix the yeast with the cool milk. Add 1 tbsp sugar, 1 yolk, pinch of baking soda and as much flour as it absorbs for a thick sludge. Leave it to bubble until doubled in volume.

In another bowl, mix the remaining eggs, salt 1 tbsp sugar, oil, lemon juice and gradually add the flour. Pour in the yeast mixture and knead a dough. It needs to be soft but not sticky to the touch.

Divide the dough into 3 balls. Roll out each one to the size of the oven dish. Be sure to have baking paper underneath. Put the rolled out pieces of dough one atop the other, while smearing with oil between the 1st and 2nd, between the 2nd and 3rd and not putting oil on the last one. Place a glass in the middle and make 8 cuts outward from it like the rays of the sun.

Twist the resulting pieces and transfer them to an oiled and floured oven dish. Leave them to rise in it for another 30 min., then smear with egg yolk and put to bake in a 360°F (180 °C) oven for about 40-45 min. Be sure to have a large oven dish because the loaf will fluff up a lot after rising.
