Wash the vegetables, tear the cauliflower into rosettes, peel the carrots and cut them into round slices. Chop the celery coarsely with stem and leaves. Pack tightly into jars.

Pour in vinegar to cover the bottom, add salt and sugar and top off with water to the rim.
