Ingredients

  • tomatoes - 11 lb (5 kg)
  • cloves - 10
  • black pepper - 1 1/3 tbsp (20 g)
  • cinnamon - 1 tsp
  • wine vinegar - 2/5 cup (100 ml)
  • red wine - 2/5 cup (100 ml)
  • sugar - 1 cup (250 g)
  • onions - 10 medium heads, grated
  • salt - 6 - 7 tbsp

Preparation

Mash the tomatoes and remove their skins and seeds.

Boil them with the grated onions in a deep pot to the desired consistency.

30 min. before removing them from the stove, add the spices and wine.
