Ingredients

  • eggplants - 2 (medium - sized)
  • eggs - 3
  • breading - 1 packet, dry, store - bought
  • flour
  • oil
  • salt

Preparation

Cut the eggplants lengthwise, salt them and leave them to drain out their black juice, then drain well.

Beat the eggs and start breading the eggplant pieces one by one by 1st dipping each piece in flour, shaking off the excess, then dipping in the eggs and finally rolling in the dry breading.
