Ingredients

  • pork shanks - 1 hind shank
  • bay leaf - 4
  • allspice - 6 grains
  • black pepper - 10 grains
  • wine - 2/3 cup (150 ml)
  • salt - 1 tsp
  • onions - 2 large heads
  • carrots - 1 large
  • potatoes - 2 large
  • garlic - 4 - 5 cloves
  • tomatoes - 1 cup, chopped, canned
  • paprika - 1 tsp
  • parsley - 5 bunches

How to make

Wash the shank and put it in a pressure cooker, pour on water. Add the wine, bay leaves, allspice, black pepper and a little salt. Put it on the stove and boil 30-40 min. after boiling point.

Braise the diced onions and carrot in a little oil. Add the coarsely chopped potatoes and garlic as well. Fry a bit more and stir.

Place the boiled shank in the middle of a small tray and sprinkle with the paprika, while smearing with a little oil on top. Pour the potatoes in around the shank. Add 2 ladles of the broth in which you boiled the meat.

Sprinkle on a tablespoon of tomatoes here and there.

Put the dish in a preheated 360°F (180 °C) oven to cook for another 30 min. Baste the shank 2-3 times during baking with the sauce.

Optionally, sprinkle with chopped parsley.
