Clean and chop the leeks into slices. Put it in a saucepan, add the oil and cleaned and finely chopped carrots.

Saute for about 4-5 min., then add the cleaned and washed rice. Fry until the rice turns glassy, then take off the stove.

Add salt, parsley, stir well and pour everything into a small tray. Add the tomatoes, stir well again, then pour in 2 cups hot water.

Bake in a 482°F (250 °C) oven until ready. If needed, during baking, pour in more hot water.find similar recipes here
