Ingredients

  • turkey - 10 lb (4.5 kg)
  • offal - from the turkey
  • pork - 17.5 oz (500 g)
  • bread - 1 slice
  • olives - 2/5 cup (100 g)
  • raisins - 2/5 cup (100 g)
  • eggs - 3
  • paprika - 2 tsp
  • all purpose spice - 2 tbsp
  • black pepper - 2 pinches
  • mushrooms - 3.5 oz (100 g)
  • leeks - 2 bunches
  • onions - 1 head
  • white wine - 2/3 cup (150 ml)
  • water - 2/3 cup (150 ml)

How to make

Put the pork in salted water and boil it. Chop the leeks and onions finely. Saute them in a little oil. To them add the finely chopped mushrooms and offal. Add spices and remove from the stove.

Chop the boiled meat finely. Put it in a bowl, add the eggs, the soaked in water and then drained bread slice, the finely chopped olives and raisins. Pour the mixture into the pan with the onions.

Place the turkey in a tray. Sprinkle it well with the spices, salt and black pepper. Stuff it with the filling, while also putting some under its skin. Sew it closed with thick thread and smear it with oil. Pour the water and wine in the tray.

Cover with foil and bake at 390°F (200 °C) about 3-4 hours, first baking on one side and then on the other. Baste it periodically with the sauce. Toward the end of baking, remove the foil and finish baking. Serve with lemon slices.
