Ingredients

  • spaghetti - 13.5 oz (380 g)
  • sausages - 7 oz (200 g)
  • tomatoes - 3 ripe medium
  • mushrooms - 9 oz (250 g)
  • onions - 1/2 head
  • garlic - 1 clove
  • parsley - 2 sprigs
  • pepper - cayenne, to taste
  • parmesan cheese - 3 tablespoons shredded
  • olive oil - 3 tbsp
  • salt - to taste

How to make

Blanch the tomatoes for a few minutes so that they can release their skins, then remove seeds and blend them. Clean and wash the mushrooms, cut them into thin slices.

Peel the onions and garlic, then finely chop and fry with mushrooms, sprinkle with some chopped parsley. Add some chopped sausage, stir and let set for 5 minutes.

Stir the tomatoes in with some chopped chilli and let it boil for about 15 minutes over medium heat. Boil the pasta and remove its water.

Transfer everything into a deep bowl, mix together with the prepared sauce and sprinkle with chopped parsley. Finish off with grated Parmesan.
