Ingredients

  • rice - 2/3 cup (150 g)
  • leeks - 1 sprig
  • carrots - 1
  • peppers - 1 green
  • garlic - 3 cloves
  • tomatoes - 14 oz (400 g)
  • oil - 2 2/3 tbsp (40 ml)
  • vegetable stock - 4 1/5 cups (1 liter)
  • sour cream - 2/3 cup (150 g)
  • salt
  • black pepper
  • curry - 1 tsp
  • parsley - 1/3 bunch

Preparation

Cut all the vegetables into small pieces. Heat oil in a pot and fry the leeks, carrots, peppers and garlic.

After a while, add the rice, stir briefly and add the cleaned and finely chopped tomatoes.

Add the broth and let the soup simmer under the lid until the rice boils.

If necessary, you can pour in more water.

Finally, season your soup with the spices and pre-beaten cream. Serve the ready rice soup with a little crushed fresh parsley.find similar recipes here
